Tocopherols (tocopherols) are a group of fat-soluble chemical compounds of similar chemical structure (homologous compounds) with intense antioxidant properties. They present multiple physiological actions and intake by the human body in small amounts through food is essential. Collectively, tocopherols are known as vitamin E and are found in vegetable oils and plant-based foods in general. Tocopherols are distinguished by the letters of the Greek alphabet: α, β, γ, δ, ε, ζ and η. The most important of these is α tocopherol (d-alpha-tocopherol), as it is characterized by better absorption and bioavailability and with in this form the majority of clinical studies have been conducted.
