Tamarind has seeds high in polysaccharides, which are used for energy storage. These are mainly galactoxyloglycans, consisting of a main chain of glucose molecules with xylose and xylose-galactose side groups. Arabinose is also present, but to a lesser extent. Their structure is very branched. Extensive research has confirmed that polysaccharides derived from higher plants have immunostimulating properties.
