Local growers start collecting flowers at sunrise, when Crocus vegetable oils are at their highest concentration - a long, manual process. At the end of the day, the crocodile fields look bare, but the next morning they again have the enchanting look of a purple sea. On the same day of the collection, in the familiar of each producer, the petals stand out from the stamens and the spots, with exceptional care. This is followed by the drying of the spots. Work that requires experience and art, in order for the yolk to dry normally and retain its properties unchanged - strong antioxidant action, color and aroma. During the winter, the women of the area patiently separate the precious spots from the stamens.
150.000 flowers are required for 1 kg of dried spots - a ratio that rightly gives the Kozani Crocus the title of the gold of the Greek land.
